Tuesday Tea: National Hot Tea Month

I found out yesterday that January is National Hot Tea Month, and my inner tea geek is rejoicing at the excuse to drink more tea (not that I really needed an excuse)!

One thing I would like to experiment with though is cooking with tea.  Tea, like wine, is chock full of tannins and can be used to bring out flavors in food.  Plus, how good do these recipes sound:
